A Great Man

The Prophet and President of the Church of Jesus Christ of Latter Day Saints passed away this evening. I am sadded and overjoyed. This is the Prophet that I have come to know over the last 9 nine years since I joined the Church. His words and counsel have given my life direction. I am so sad to know that he is no longer with us...but he is at last rejoined with his beautiful wife whom he dearly missed. I am grateful to have had him as one of our Prophets...a seer and a revelator. His life and legacy will continue on for many many years to come.

The Latest Stats...

Here he is....my 9 month old! And to celebrate we went and bought him some bath toys. So maybe with the bath toys he will concentrate on those as opposed to constantly splashing me. And I'm sure that I say this all of the time...but I can't believe how fast the time has gone by, and cannot believe how big he is getting. So we went to the doctor yesterday and the offically stats are 30 1/2 inches long and 22 1/2 lbs and cute as can be. Joe just said last night that he can't believe that he is nearly a year old. Just a few more months and he will be! Zachary has been Mr. Jabber Jaws the last couple of days. I'm sure that it is only the beginning but my goodness does he like to talk. I keep on telling him that we are going to California soon so maybe he is just expressing his excitement!

Happy Birthday Joe!!!!

I'm a little late posting this....but Happy Birthday Joe! His birthday was this past Monday. He really didn't have much of a birthday considering the restaurant reopened on the same day. So he is back to the 12+ hour days once again. I'm so proud of him! He has really worked hard to get the kitchen back together and working to revamp the menu....which by the way is delicious! So if anyone is in town and wants to enjoy a fine dining experience, feel free to stop by Baxter's Americana. The restaurant is in the same place but just with a new name. It is in the northern most part of The Gateway in the old train depot station across from the Delta Center...or Energy Solutions Arena...whatever you want to call it. The grand opening is scheduled for early next month. He is supposed to do some radio spots and TV spots in the near future. Zachary and I, along with some of Joe's cousins were lucky enough to eat at the restaurant on Saturday night. I totally recommend it! He is so lucky to be able to do something that he is not only good at but so passionate about. Being in the kitchen is definitely one of his God given talents.

Anyhow....Happy Birthday Babe! I'm so proud of you and all of your hard work.

My Husband Loves Me....

Why does he love me you ask? HE TOLD ME TO GO TO CALIFORNIA!!!!!!! WOOT WOOT!!! I totally have the besterest husband EVER! Yea for me and Zachary! Friends and family we are coming for a visit next month! Too bad Joe can't come. The restaurant will be in full swing by that time. I can hardly contain myself I am so EXCITED!!!!! Beach? Oh beeach? Can you hear me?! HERE WE COME!!!!!

Missing the Strand


Now that Zachary has gone to bed....I can do another post. Today I am really really REALLY missing the beach. Here is a picture of the beloved Silver Strand beach in "the Nard". Today of all days I am missing the waves, the wind, the smell of salt in the air, the sand between my toes. I could be there...but I'm here. Here where it is a warm 10 degrees right now. It hurt my lungs to breathe every time I would walk outside. BLAH! I miss our families. I miss our friends. I miss really good Mexican food...ohhhh to eat at Sal's again. I miss the warmth. Here I am boo-hooing and it is only mid-January. We will probably have snow here until April/May. Can you tell that I am just a bit homesick today?! Tomorrow should be better...I think that it is going to get up to 25 degrees! Yipeeeeeeeeee!

Laughing Zachary



Lately, Zachary has just been cracking up. And lucky for me I've been able to catch it on camera. He is so funny! I get out the camera and he knows to smile and then he just starts laughing. So dang cute!!!! He is also babbling ALL of the time. He says mamamama, dadadadada, and babababababa. I'm not sure if he really relates Joe and I to what he is saying but I like to pretend that he does. =) We have family pictures on our fridge and he is always staring at them. So when he is done eating any meal then we go on over to the fridge and point out all of our family members. So I'm hoping that even though we don't live close to our families that he will still learn who each and every one are.

We think that he might even be crawling soon. But Joe seems to think that he might walk first. This baby just doesn't really like to be on his belly for any length of time. He would rather be sitting up enjoying his toys and playing with mommy.

Joe has been super duper busy with work. As many of you know the restaurant closed down in early December. And is reopening next week (sadly on his birthday) under a new name and a whole new concept. The restaurant will be called Baxter's American...I think...at least I know that the Baxter's part is right. And instead of it being Asian/French type of food it is going to be more main stream American. He has worked really really hard in getting new recipes together and tried and tested. I get to go eat on Saturday night for a friends and family type of deal. I can't wait! Although Joe has brought home plenty of desserts home to test out. My favorite has been the cheesecake with a brownie crust. Cheesecake Factory ain't got NOTHING on this one! So I'll have to let y'all out there in blogging land know how my dining experience was after I get to try everything out. Zachary is waking up from his nap.....so that's our update for now. See ya!
